- 1/2 cup salted butter - softened
- 1 cup sugar
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/3 cup mashed ripe bananas
- 1/3 cup pumpkin puree
- 1/4 cup diced, drained
- 1/4 cup honey
- 2 eggs
- 2 tsp Jack O's Punkin’ Spice
- 1 tsp baking powder
- 1/2 tsp baking soda
Preheat oven to 350 degrees. Line 12-cup muffin tin with wrappers.
In a mixing bowl, cream butter and sugar. Beat in eggs. Add pumpkin, banana, and pineapple.
In a separate bowl, combine flours, baking soda, baking powder, and Jack O's Punkin’ Spice. In two batches, slowly add to wet ingredients, with mixer on low speed. Turn off mixer and scrape down sides with rubber spatula.
Fill muffin tin with batter and bake for 30-35 minutes until muffins are slightly browned. Check done-ness by inserting a toothpick. If the toothpick comes out clean, you are good to go!
While cooling, use a toothpick or knife to make 6-10 small holes in muffins. Drizzle on honey and add a final sprinkle of Jack O's Punkin’ Spice on top.
