Preheat oven to 350 degrees F. 

For the crusts:
Use a food processor or blender to crush graham crackers and pour into large mixing bowl. Add melted butter, granulated sugar, and Spiced Vanilla Sugar. mix until well combined. 

Evenly press graham cracker mixture into 2, 9 inch pie pans. Bake crusts at 350 for 6-7 minutes until slightly browned. Set aside to cool while preparing the pie filling:

For the pie filling:  
In a large mixing bowl, combine condensed milk, egg yolks, key lime juice, and lime zest until smooth. Pour evenly into both pie pans and bake at 350 for 15-20 minutes. When done, the centers will be set and pies will slightly shake like jello when moved. Let pies cool at room temperature for 10-15 minutes. Refrigerate at least 1 hour before serving or adding whipped topping:

For the whipped cream topping (optional):
In a large mixing bowl, whisk (electric mixer is the easiest way to accomplish this unless you want a serious arm workout) heavy cream until it begins to fluff up. Gradually incorporate powdered sugar and vanilla extract until soft peaks form. 

For an optional tasty twist, add fresh vanilla bean by slicing the bean in half and using the back of your knife to scrape the seeds out. Slowly fold beans into whipped cream. Chill for 5-10 minutes. Place whipped cream into piping bag and decorate each pie to your liking. 

Place lime slices on top of each pie for garnish (optional) and enjoy!

spiced vanilla key lime pie

For the crusts:
• 3 cups graham crackers, crushed (approx 20 cracker sheets)
• 2 Tbsp butter, melted
• 1/2 cup granulated sugar
• 2 Tbsp Spiced Vanilla Sugar

For the pie filling:
• 2, 14oz cans sweetened condensed milk
• 6 egg yolks
• 1 cup key lime juice
• 1 Tbsp lime zest
• 3-6 lime slices, for garnish (optional)

For whipped cream topping (optional):
• 1 cup COLD heavy whipping cream
• 1/2 cup powdered sugar
• 1 tsp vanilla extract
• 1 vanilla bean (optional)
