Asian Chicken Skewers

 

 

Ingredients

2 lbs chicken breasts – cut into cubes
2 tbsp Bang Bang spice blend (sweet or spicy, you choose!)

FOR DIPPING SAUCE:

1 tbsp creamy peanut butter
2 tsp soy sauce
1 tsp sesame oil

OPTIONAL:

1 package rice noodles
8 oz. snow peas
½ cup shredded carrots

 

Preheat oven to 375.

Place cubed chicken breasts in a ziplock bag and add 1 to 1.5 tbsp Bang Bang blend. Shake until all pieces are coated. Stick em up! I used about 5-6 on each skewer.

Heat a pan or cast iron skillet and sear on each side until just browned. Place skewers on baking sheet and bake for 12-15 minutes until done.

For dipping sauce: combine remaining Bang Bang spice, sesame oil, peanut butter, and soy sauce. You can add or remove the amount of soy sauce to - taste.

This recipe will go great with rice or vegetables. This meal was served with rice noodles, snow peas, and carrots. Give it a try and let us know what you think!

**Both Bang Bang blends are salt free. Feel free to add salt to your chicken cubes, but I found that the sauce is salty enough and balances out well with the chicken.
