Beef and Bean Enchiladas

INGREDIENTS
FOR THE ENCHILADAS
12 oz ground beef
5 large flour tortillas
1 - 15oz can black beans, drained
1 cup cheddar cheese, shredded
1 Tbsp ketchup
1 Tbsp olive oil
1 tsp garlic, minced
1 tsp salt
1 tsp Holé Molé - savory chocolate blend
FOR THE SAUCE
1 - 15oz can tomato sauce
2/3 cup red salsa, medium heat
1/4 cup yellow onion, diced
2 Tbsp Holé Molé - savory chocolate blend
2 tsp garlic, minced
1 tsp sugar
1/2 tsp chipotle hot sauce
PREPARATION
FOR THE ENCHILADAS:
1) Preheat oven to 400 degrees F. Grease 9x13 casserole dish with olive oil or butter. Spread 1/4 cup enchilada sauce (recipe below) in bottom of pan. Set aside.
2) Heat large skillet to med-hi. Add olive oil. Add ground beef, Holé Molé, garlic, salt, and ketchup. Break up with spatula or wooden spoon and cook for 7-8 mins until nicely browned. Drain and set aside.
3) Fill the tortillas: evenly layer cheese, beef, and beans. Roll bottom of tortilla up and over filling. Place in casserole dish seam side down.
4) Top with enchilada sauce (recipe below) and remaining cheese. Bake 20 mins. Garnish with sour cream, lettuce, jalapenos, or desired toppings.
FOR THE ENCHILADA SAUCE:
1) Combine all ingredients in a medium sized pot.
2) Heat to med-hi. Reduce heat to simmer and cook for 8-9 mins, stirring frequently.
3) Remove from heat.
