Ragin' Cajun Hashbrowns

Nothing like some crispy, spicy hashbrowns to get you going in the morning!

Try served with eggs, avocado, and arugula or simply enjoy by themselves.

INGREDIENTS

  • 2 cups frozen shredded hashbrowns

  • 1/2 cup onion, diced

  • 1/3 cup red bell pepper, diced

  • 1/4 cup vegetable oil

  • 1/4 cup cheddar cheese, shredded

  • 1/2 tsp Ragin' Cajun seasoning

  • pinch of salt

 

PREPARATION

1) In a large skillet or cast iron pan, heat oil on med-hi for 2-3 mins (should be around 350 degrees F).

2) Spread hashbrowns evenly around pan. Top with onions, peppers, and a pinch of salt. DO NOT STIR.

3) Fry hashbrowns for 10 mins or until bottom is starting to brown. Flip and fry for another 7-8 mins.

4) Evenly sprinkle cheese and Ragin' Cajun over top of hashbrowns. Remove from pan when cheese is melted and place on a papertowel-lined plate.

Serve with an egg, avocado, and arugula as a suggestion! Feel free to substitute the bell pepper and onion for your favorite veggies instead.
