BBQ Baked Salmon

INGREDIENTS
4 - thick skinless salmon cuts (approx. 2lbs.)
1 medium tomato, cut into 4 slices
1/4 cup BBQ sauce
3 Tbsp Holy Smokes BBQ Rub
1 Tbsp soy sauce, low sodium
1 Tbsp grape jelly
1 tsp garlic, minced
butter or oil for greasing pan
PREPARATION
1) Generously coat all sides of salmon cuts with Holy Smokes rub. Cover with plastic wrap and place in refrigerator for at least 30 minutes.
2) Preheat oven to 400 degrees F.
3) In a small mixing bowl, combine BBQ sauce, soy sauce, grape jelly, and garlic. Set aside.
4) Heat a medium sized skillet to med-hi. Grease with butter or oil. Place salmon cuts in pan and sear 1-2 mins on each side until nicely browned.
5) Place salmon cuts on greased baking sheet and baste with sauce. Top each cut with a tomato slice. Bake for 12-15 minutes or until internal temperature of salmon reaches 135-140 degrees F.
6) Serve with your favorite side dish and enjoy!
