Carolina Honey Glazed Carrots

INGREDIENTS
8-10 large carrots, sliced
1 cup vegetable broth
2 Tbsp salted butter, divided
1 Tbsp Carolina BBQ rub
1 Tbsp honey
parsley, for garnish (optional)
PREPARATION
1) Heat large skillet on med-hi. Cut carrots into long thin slices.
2) Melt 1 Tbsp butter in skillet. Add carrots, broth, Carolina BBQ. Heat to a boil then reduce to simmer. Cook covered for 20 minutes or until carrots can be pierced with a fork.
3) Uncover and add honey. Let liquid reduce until it thickens into a glaze. Add more Carolina BBQ or honey to-taste.
4) Remove from heat. Garnish with parsley or carrot greens (optional)
