Spicy Chipotle-Honey Vinaigrette

This vinaigrette recipe is so easy and so delicious! Feel free to adjust the heat by adding more or less chipotle peppers in adobo. This recipe calls for two whole peppers. It’s not insanely spicy, but does have a good kick after each bite.
The above picture is the steak salad I made for dinner tonight. Below is a close-up of the vinaigrette. You can use it on salads, chicken, shrimp or as a marinade.

INGREDIENTS
1/2 cup olive oil
1/3 cup red wine vinegar
3 Tbsp honey
2 whole chipotle peppers in adobo sauce
1 Tbsp adobo sauce
1 Tbsp distilled white vinegar
1 tsp garlic, minced
1/4 tsp Chili Powder Blend
salt to taste
PREPARATION
1) Combine all ingredients, except salt, in a small food processor or blender.
2) Gradually add salt, pulsing mixture before tasting until desired salt-level.
It's easy to over-salt this vinaigrette so this method will ensure you don't add too much.
3) Pour into a jar with lid. Serve immediately or refrigerate up to one month.
This vinaigrette is delicious served on salads, steaks, shrimp, or used as a marinade!
Recipe makes a little more than 1 cup. Serving size is measured 1-2 Tbsp for salad dressing.
