Chimichurri Riced Cauliflower

INGREDIENTS
1 large head cauliflower
1 small yellow onion, diced
1 cup yellow corn
2 Tbsp Chimichurri blend
1 Tbsp olive oil
pinch of salt, to taste
PREPARATION
1) Preheat oven to 400 degrees F.
2) Roughly chop cauliflower. Place into food processor with Chimichurri, olive oil, and onion. Pulse until it is well combined and about the size of rice grains. Stir in corn.
3) Spread evenly onto a baking sheet. Bake 20 minutes. Remove from oven and stir cauliflower mixture up on pan.
4) Set oven to broil. Place baking sheet back in oven and broil for 4-5 minutes, until cauliflower is nicely browned.
5) Remove from oven. Salt to taste. Serve in place of regular rice in your favorite dishes or use as a delicious topping to salads, burrito bowls and tacos.
