Pork Milanese

INGREDIENTS
4 - 1 inch thick boneless pork chops (approx. 1 lb)
1 cup panko breadcrumbs
1 cup all purpose flour
1 cup vegetable oil
2 eggs
1 Tbsp Italian Salt
1 lemon (cut into wedges)
splash of water
PREPARATION
1) Preheat oven to 400 degrees F.
2) Sprinkle Italian Salt over all sides of the pork chops. Set aside about 1/2 tsp salt for breadcrumbs.
3) On a cutting board, one at a time, cover the chops with a sheet of plastic wrap. (This step is optional, but helps cut down any splatter that may occur)
4) Use a meat mallet to hammer the chops until about 1/4 inch thick. Set aside. Heat oil in large skillet to medium temperature.
5) While oil is heating, grab 3 med-lg size bowls. Pour flour in one, panko and remaining salt in the second, and whisk 2 eggs with a splash of water in the third.
6) Coat each chop, in this order: flour, egg wash, panko. Place chops one at a time in the oil. Keep oil on medium heat so the breadcrumbs don't burn.
7) Sear each side 2-3 minutes until nicely browned. Place chops on baking sheet and bake for 5-6 mins. Internal temp should be 145-150F. Rest 3 mins. Serve with a lemon wedge.
