Spicy Bang Bang Veggie Soup

INGREDIENTS

  • 4 cups vegetable broth

  • 1 cup mung bean sprouts

  • 1/2 cup mushrooms, sliced

  • 1/2 cup bok choy, sliced

  • 1 medium onion, sliced

  • 1/4 cup scallions, sliced

  • 2 Tbsp butter, salted

  • 2 Tbsp rice wine vinegar, unsalted

  • 1 Tbsp garlic, minced

  • 1 Tbsp doenjang soybean paste

  • 1 Tbsp oyster sauce

  • 1 Tbsp lite soy sauce

  • 2 tsp gochujang sauce

  • 2 tsp dark soy sauce

  • 1 tsp Spicy Bang Bang

  • pinch of turmeric, for color

 

PREPARATION

1) Melt 1 Tbsp butter in large pot on stove. Add onion and garlic. Saute for 4-5 mins until onion turns slightly translucent.

2) Add remaining ingredients, except last Tbsp of butter. Stir. Heat to boil then reduce to simmer. Simmer uncovered for 20-25 mins until liquid starts to reduce.

3) Turn heat off. Add remaining butter. Stir until melted. Garnish with white sesame seeds (optional). Serve.
